  • 28 oz kielbasa sliced
  • 20 oz frozen tortellini
  • 32 oz frozen vegetables broccoli or a mixed variety
  • 3-4 tbsp olive or avocado oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup shredded parmesan cheese

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • If using boxed or fresh tortellini, boil according to package instructions. Once cooked, set aside. Tip: Ensure the tortellini is al dente for the best texture after baking.
  • On a large sheet pan, combine the sliced kielbasa, frozen tortellini, and frozen vegetables.
  • Drizzle the mixture with olive or avocado oil, then sprinkle with garlic powder, onion powder, paprika, salt, pepper, and shredded parmesan cheese.
  • Toss everything together until well coated. Tip: Use your hands to mix for an even coating.
  • Bake in the preheated oven for 25-30 minutes, stirring the mixture every 10 minutes to ensure even cooking.
  • Once done, remove from the oven and let it cool for a few minutes before serving. Tip: This dish is great for leftovers!

Notes

Feel free to use any frozen vegetable mix you enjoy! For added flavor, consider mixing in some Italian herbs or red pepper flakes.
