  • 2 lbs top sirloin
  • 2 pears, peeled and cut into chunks
  • 2 inches knob of ginger
  • 4 cloves garlic
  • 1 cup soy sauce
  • 1 cup brown sugar
  • 1 tbsp sesame oil
  • 1 cup cooked rice
  • 1 cilantro, basil, green onions, and mint (optional)
  • 1 kimchi
  • 1 sriracha mayo or yum yum sauce
  • 1 large flour tortillas

Instructions
 

  • Thinly slice the top sirloin. In a food processor, pulse the pear, garlic, and ginger until smooth. This mixture will help flavor the beef beautifully.
  • Place the sliced beef, pear-garlic-ginger mixture, soy sauce, brown sugar, and sesame oil in a slow cooker. Cover and cook on high for 3-5 hours until the beef is tender and flavorful. Make sure to stir occasionally if possible, to ensure even cooking.
  • Prepare the burrito fillings: cook the rice, chop the herbs, and get your sauce ready. This is a great time to get your table set up for assembly!
  • Lay a flour tortilla flat on a piece of foil. Add rice, Korean BBQ beef, herbs, kimchi, and sauce in the center of the tortilla. Don’t overfill to make wrapping easier!
  • Fold the sides of the tortilla up, then roll it from front to back. If saving for later, wrap it with foil. These burritos freeze well for future meals, so make a batch to enjoy later!
