  • 1 pound boneless, skinless chicken breasts cut in half lengthwise
  • 0.25 cup low sodium or gluten-free soy sauce
  • 0.25 cup unsweetened apple sauce
  • 0.25 cup finely chopped yellow onion
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 tablespoon light brown sugar
  • 2 cloves garlic, crushed
  • 1 teaspoon red pepper flakes optional
  • 1 teaspoon sesame seeds plus more for topping
  • 2 pieces thinly sliced scallions white and green parts

Instructions
 

  • Place each chicken breast in a Ziploc bag and gently pound to an even thickness of about ½ inch, being careful not to puncture the bag.
  • In a medium bowl, mix together the soy sauce, apple sauce, chopped onion, sesame oil, grated ginger, brown sugar, crushed garlic, red pepper flakes (if using), and sesame seeds. Reserve 1/4 cup of this marinade for later.
  • Pour the remaining marinade into the Ziploc bag with the chicken. Seal the bag and refrigerate for at least 1 hour to marinate.
  • Preheat your grill to medium-high heat.
  • Grill the chicken for 2 to 3 minutes on one side, or until it no longer sticks to the grill.
  • Flip the chicken, spoon the reserved 1/4 cup of marinade over each breast, and grill for an additional 2 to 3 minutes, or until fully cooked.
  • Remove the chicken from the grill and let it rest for a few minutes. Top with additional sesame seeds and sliced scallions before serving.

Notes

For added flavor, consider marinating the chicken overnight. Serve with steamed vegetables or rice for a complete meal.
