  • 2 large boneless, skinless chicken breasts
  • Salt to taste
  • Pepper to taste
  • 0.25 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 0.5 cup chicken broth
  • 2 tablespoons lemon juice
  • Chopped fresh parsley for garnish

Instructions
 

  • Cut the chicken breasts in half lengthwise to create thinner cutlets.
  • Season them with salt, pepper, and garlic powder.
  • Dredge the chicken in flour until coated evenly.
  • In a skillet over medium-high heat, add olive oil and 1 tablespoon of butter.
  • Once hot, place the chicken cutlets in the skillet and cook for 4-5 minutes on each side until golden.
  • Remove the chicken from the pan and set it aside.
  • Pour chicken broth, lemon juice, and the remaining butter into the skillet.
  • Let it simmer for a couple of minutes.
  • Return the chicken to the skillet and cook for a few more minutes until fully cooked.
  • Adjust seasoning with salt and pepper.
  • Sprinkle fresh parsley on top if desired.

Notes

For a zestier flavor, add more lemon juice or zest. Serve the chicken with rice or a side salad for a complete meal.
