  • 5 pieces Chicken Breasts
  • 0.5 tsp Coarse Salt
  • 0.25 tsp Pepper
  • 0.5 cup Butter, divided
  • 1.5 tsp Italian Seasoning
  • 0.25 cup Low Sodium Chicken Broth
  • 2 tsp Chicken Bouillon
  • 3 cloves Garlic, pressed or finely minced
  • 2 pieces Lemons, zested and juiced (about 1/4 cup juice)
  • 1 cup Heavy Cream
  • 1 Tbsp Corn Starch

Instructions
 

  • Season the chicken breasts with coarse salt and pepper. Set them aside while you prepare the skillet.
  • Heat a skillet over medium-high heat and add 2 tablespoons of butter. Once melted, add the chicken breasts and brown them for about 3-4 minutes on each side. You may need to do this in two batches. Remove the chicken to a plate; they will still be raw inside.
  • Lower the heat to medium-low. Add the Italian seasoning to the skillet and stir for about 30 seconds to bloom the spices. Then, pour in the chicken broth and deglaze the pan by stirring and scraping up the browned bits from the bottom.
  • Stir in the chicken bouillon until dissolved. Set the skillet aside.
  • In a slow cooker, place the chicken breasts in a single layer. Add the minced garlic, lemon zest, and lemon juice on top.
  • Cut the remaining butter into pieces and distribute it over the chicken. Pour the reserved pan juices from the skillet over the chicken.
  • Cover the slow cooker and cook on Low for 3 hours or High for 2 hours.
  • In the last hour of cooking, whisk together the heavy cream and corn starch until smooth. Pour this mixture over the chicken, cover, and continue cooking on High for 1 hour.
  • Once done, remove the chicken breasts and place them on a plate. Whisk the sauce in the slow cooker to combine everything well. Taste and adjust the salt if needed.
  • You can serve the chicken breasts whole with sauce over them, or shred or slice the chicken and mix it back into the sauce. This dish is fantastic over pasta, mashed potatoes, rice, or your favorite side!

Notes

For added flavor, garnish with lemon slices, fresh parsley, parmesan cheese, and freshly ground pepper. Feel free to add vegetables like spinach or mushrooms to the slow cooker for a complete meal.
