  • 1.5 lbs boneless skinless chicken breast
  • 0.25 cup gluten-free flour or Arrowroot powder
  • 2 tbsp grass-fed butter or ghee
  • 3 cloves fresh garlic, minced
  • 1 cup chicken bone broth
  • 1 tbsp gluten-free flour or Arrowroot powder
  • 2 tbsp fresh lemon juice
  • 14 oz water-packed quartered artichoke hearts, drained
  • 0.5 cup pitted green olives, sliced diagonally
  • 2 tbsp minced fresh oregano or 2 tsp dried oregano
  • fresh lemon slices for garnish

Instructions
 

  • Pound the chicken breasts to an even thickness for uniform cooking.
  • Season chicken with salt and pepper, then coat lightly with flour, shaking off excess.
  • Melt butter in a skillet over medium heat, sear chicken for 3-4 mins per side until golden brown, then set aside.
  • Sauté minced garlic in the same skillet for 1 minute until fragrant.
  • Whisk together chicken broth and 1 tbsp flour in a bowl, then pour into skillet, stirring to deglaze.
  • Return chicken to skillet, add artichokes, olives, and oregano; simmer covered for 10-15 mins until chicken is cooked through.
  • Serve hot garnished with fresh lemon slices.

Notes

For added flavor, consider marinating the chicken in lemon juice and herbs for a few hours before cooking. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
