  • 8 ounces spaghetti
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, grated or finely minced
  • 0.25 teaspoon red pepper flakes
  • 1 whole lemon, zested and juiced
  • 2 cups baby spinach
  • 0.5 cup freshly grated parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions
 

  • Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions (about 9-10 minutes). Reserve 1 cup of pasta water before draining.
  • In a large skillet over medium heat, melt the butter. Add garlic and red pepper flakes, cooking for 30 seconds to 1 minute until fragrant.
  • Pour in lemon juice and ½ cup reserved pasta water. Once bubbling, add spinach and cooked spaghetti. Toss until spinach wilts and sauce coats noodles.
  • If pasta seems dry, add an additional ¼ cup pasta water. Remove skillet from heat.
  • Stir in lemon zest, parmesan cheese, salt, and black pepper. Toss to combine before serving.

Notes

For extra flavor, consider adding grilled chicken or shrimp. Adjust red pepper flakes to suit your spice preference.
