  • 0.25 cup lemon juice
  • 0.25 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons minced fresh ginger
  • 2 medium garlic cloves, minced
  • 2 tablespoons minced fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1.5 lbs boneless skinless chicken thighs or breasts

Instructions
 

  • In a large bowl, whisk together the lemon juice, soy sauce, olive oil, ginger, garlic, parsley, salt, and black pepper until well combined.
  • Place the chicken in a sealable bag or a bowl and pour the marinade over the top. Seal the bag or cover the bowl, then marinate the chicken in the refrigerator for at least 2 hours, or up to 12 hours for more flavor.
  • When ready to cook, remove the chicken from the marinade and pat it dry with paper towels. Discard the marinade.
  • Preheat your grill to medium-high heat. Grill the chicken, turning occasionally, until it reaches an internal temperature of 165°F (75°C). This should take about 6-8 minutes per side, depending on thickness.
  • Serve the grilled chicken warm and enjoy!

Notes

For a spicier kick, add a pinch of red pepper flakes to the marinade. This dish pairs wonderfully with grilled vegetables or a fresh salad.
