Heat vegetable oil in a large skillet over medium-high heat.
In a small bowl, combine honey, soy sauce, rice vinegar, and lemon juice. Mix well and set aside.
Cut the chicken breasts into strips, ensuring they are of even size for uniform cooking.
In a medium bowl, mix cornstarch, garlic powder, and black pepper. Coat the chicken strips with this mixture.
Place the coated chicken strips in the skillet and cook over medium-high heat until golden brown on both sides, about 3-4 minutes per side.
Add butter to the skillet and melt. Stir in minced garlic and cook for 1 minute until fragrant, but be careful not to burn the garlic!
Pour the honey glaze mixture over the chicken in the skillet. Cook over medium heat until the sauce thickens and the chicken is fully cooked, about 5-7 minutes.
While the glaze is cooking, spoon it continuously over the chicken to ensure each piece is well-coated and flavorful.
Serve the sweet and sticky honey garlic chicken over steamed rice, and don’t forget to drizzle some extra glaze over the top for that extra flavor!
