  • 2 large eggs
  • 1.5 tsp lemon juice
  • 1 Tbsp lemon zest
  • 2.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup butter, softened (for frosting)
  • 4 cups powdered sugar
  • 1 dash salt
  • 1 Tbsp lemon zest (for frosting)
  • 2 Tbsp fresh lemon juice (for frosting)
  • 1 Tbsp milk, if needed

Instructions
 

  • Preheat your oven to 350°F (175°C). This step is crucial to ensure your cookies bake evenly.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. This usually takes about 2-3 minutes.
  • Add in the eggs, lemon juice, and lemon zest. Beat until well combined, ensuring that all ingredients are thoroughly mixed.
  • Gradually stir in the all-purpose flour, baking powder, and salt until a dough forms. Be careful not to overmix, as this can lead to tough cookies.
  • Roll the dough into tablespoon-sized balls and place them on lightly greased cookie sheets, leaving space for spreading.
  • Flatten each ball with a glass dipped in sugar for a sweet touch.
  • Bake for 9-10 minutes, or until the bottom is barely light brown. Keep an eye on them to prevent overbaking!
  • Allow the cookies to sit on the pan for 3-4 minutes before transferring them to cooling racks.
  • Once the cookies are completely cooled, prepare the frosting by beating together the softened butter, powdered sugar, salt, lemon zest, and lemon juice until creamy.
  • If the frosting is too thick, add milk one tablespoon at a time until you reach your desired consistency.
  • Frost the cooled cookies using a piping bag with a 1M star tip for a decorative touch, or simply spread the frosting with a spatula.

Notes

For a tangier flavor, increase the amount of lemon zest in both the cookie dough and frosting.
