  • 8 medium potatoes scrubbed and dried
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 0.5 pound beef cooked and chopped
  • 6 ounces sharp cheddar cheese shredded
  • 0.75 cup mayonnaise
  • 0.75 cup sour cream
  • 4 number green onions sliced
  • to taste salt and pepper

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Rub the potatoes with olive oil and kosher salt, then place them on a baking sheet.
  • Bake for 45 to 60 minutes until tender when pierced with a fork, flipping halfway through. Let cool for 15 minutes.
  • Reduce the oven temperature to 350°F (175°C). Lightly grease a 9-inch square or 9x13-inch baking dish and set aside.
  • Cut the cooled potatoes into bite-sized pieces and place them in a bowl.
  • Stir in the mayonnaise and sour cream thoroughly to create a creamy mixture.
  • Mix in the shredded cheese, chopped beef, and sliced green onions into the potato mixture.
  • Transfer the mixture into the prepared baking dish. Top with additional shredded cheese and chopped beef for a delicious layer on top.
  • Cover the dish with foil and bake for 30 minutes, removing the foil for the last 10 minutes.
  • Top with sliced green onions before serving for a fresh crunch.

Notes

For a crispy topping, broil the casserole for a few minutes after baking.
