  • 1 1/2 pounds Ground Beef 85/15
  • 1/4 yellow onion finely chopped
  • 2/3 cup seasoned dry breadcrumbs
  • 1/3 cup whole milk
  • 1 large egg lightly beaten
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 pounds potatoes peeled and cut into 1" chunks
  • 1/3 cup unsalted butter
  • 1/2 cup whole milk
  • 1 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 1/2 cup bacon bits cooked and crumbled
  • 1 cup cheddar cheese shredded

Instructions
 

  • Preheat the oven to 375 degrees Fahrenheit.
  • In a large bowl, gently mix together the ground beef, onion, breadcrumbs, milk, egg, salt, and pepper. Press this mixture into a 9x9 baking dish.
  • Bake the meatloaf uncovered for 15 minutes, then remove from the oven and drain any excess fat.
  • While the meatloaf is baking, place the potatoes in a pot with enough water to cover them. Bring to a boil over high heat and cook for 15 minutes.
  • Drain the water from the potatoes and add the milk, butter, salt, and pepper. Mash everything together until creamy.
  • Spread the mashed potatoes over the meatloaf and top with cheese and bacon bits.
  • Bake for an additional 15 minutes, until the bacon is sizzling, the cheese is bubbling, and the mashed potatoes are slightly crispy.
