  • 4 tablespoons olive oil
  • 1 pound ground beef
  • 1 small sweet onion, diced
  • 1 packet taco seasoning
  • 7 large flour tortillas
  • 1 can refried beans
  • 1 package precooked rice
  • 3 cups Mexican shredded cheese blend
  • 1 can red enchilada sauce
  • 1 bunch cilantro for garnishing (optional)

Instructions
 

  • In a skillet over medium heat, heat 2 tablespoons of olive oil. Add the ground beef and diced onion, cooking until the beef is fully browned. Make sure to break the beef apart with a spatula for even cooking.
  • Once the beef is cooked, add the taco seasoning and stir well to combine. Cook for an additional minute to let the flavors meld. Then, set the mixture aside.
  • Preheat your oven to 350°F (175°C). While the oven is heating, grease a large oven-proof skillet with the remaining 2 tablespoons of olive oil to prevent sticking.
  • On each flour tortilla, spread a generous layer of refried beans, followed by a scoop of cooked rice, a portion of the beef mixture, and a sprinkle of cheese down the center.
  • Roll up each tortilla tightly to form burritos and place them seam-side down in the greased skillet. This will help them hold their shape while baking.
  • Bake the burritos in the preheated oven for 25 minutes. This step allows the flavors to meld and the tortillas to crisp up slightly.
  • Once baked, carefully remove the skillet from the oven. Drizzle the red enchilada sauce generously over the burritos and sprinkle the remaining cheese on top. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
  • After baking, garnish the burritos with fresh cilantro if desired, and serve them hot. Enjoy!

Notes

These burritos can be made ahead of time and frozen for later use. Just make sure to wrap them tightly to avoid freezer burn.
