Ingredients
  

Cajun Cream Sauce

  • 1 teaspoon red pepper flakes
  • 1 teaspoon Cajun seasoning
  • 0.5 teaspoon Kosher salt
  • 0.25 teaspoon ground black pepper
  • 2 cups heavy cream
  • 1 cup chicken stock
  • 1 tablespoon cornstarch
  • 1 cup Parmesan cheese, shredded

Crispy Parmesan Chicken

  • 4 pieces chicken breasts, butterflied
  • 0.25 cup flour
  • 1 cup breadcrumbs
  • 0.5 cup Parmesan cheese, grated
  • 0.5 teaspoon Kosher salt
  • 0.25 teaspoon ground black pepper
  • 2 large eggs
  • 4 tablespoons vegetable oil

Pasta

  • 1 lb Farfalle pasta
  • 2 tablespoons butter
  • 0.5 yellow bell pepper sliced
  • 0.5 red bell pepper sliced
  • 0.5 red onion sliced
  • 8 ounces crimini mushrooms, sliced
  • 1 tablespoon minced garlic
  • 0.25 cup parsley, for garnish (optional)

Instructions
 

  • Prepare the Cajun Cream Sauce by mixing the red pepper flakes, Cajun seasoning, Kosher salt, black pepper, heavy cream, chicken stock, cornstarch, and shredded Parmesan cheese in a bowl. Set aside.
  • Cook the Farfalle pasta in boiling water for 1 minute less than the package instructions. Drain and do not rinse.
  • In a bowl, combine the flour, breadcrumbs, grated Parmesan cheese, Kosher salt, and black pepper. In another bowl, whisk the eggs.
  • Dredge each butterflied chicken breast in the breadcrumb mixture, then dip it into the eggs, and coat it again in the breadcrumb mixture. Place on a tray.
  • In a skillet, melt butter over medium heat. Add bell peppers, onion, garlic, and mushrooms. Cook for 3-5 minutes until starting to brown. Remove vegetables.
  • Heat vegetable oil in the skillet. Cook the chicken for 3-5 minutes on each side until crispy and golden brown. Drain excess oil.
  • In the same skillet, add the cooked pasta and sautéed vegetables. Pour in the Cajun cream sauce mixture and stir. Let it thicken for 3-5 minutes.
  • Slice the crispy chicken and serve over the pasta. Garnish with extra Parmesan cheese and parsley if desired.

Notes

For a little extra kick, feel free to adjust the amount of red pepper flakes in the sauce. You can substitute the Farfalle pasta with any pasta shape you prefer. Add your favorite vegetables to the mix for more color and flavor! No alcoholic drinks allowed, please substitute with a non-alcoholic option.
