  • 28-32 ounces frozen French fries
  • 1.5 teaspoon brown sugar
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon chili powder
  • 0.25 teaspoon paprika
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 4 tablespoon ranch dressing plus more for dipping
  • 2 tablespoon butter
  • 2 tablespoon flour
  • 0.67 cup milk
  • 2 cup medium cheddar cheese freshly shredded

Instructions
 

  • Preheat the oven according to the French fries package directions. Line 2 baking sheets with foil and spray with cooking spray.
  • In a small bowl, mix all the seasonings except the ranch dressing. Spread the fries on the prepared baking sheets, dividing them between the two trays. Sprinkle the seasoning mix over the fries on both trays. (Save ½ teaspoon of seasoning for later if desired)
  • Toss the fries to coat evenly and ensure they are in a single layer.
  • Bake following the package directions, rotating the pans in the oven if necessary to ensure even cooking.
  • For the cheese sauce, melt the butter in a medium skillet over medium-low heat. This helps to prevent burning.
  • Add the flour and whisk together, cooking for a minute or two to create a roux.
  • Slowly whisk in the milk until well combined, ensuring there are no lumps.
  • Let the sauce cook for a few minutes until it thickens, then gradually add the cheese, allowing each addition to melt fully before adding more. This ensures a smooth cheese sauce.
  • Reduce the heat to the lowest setting to keep the sauce warm but not cooking while preparing the fries for assembly.
  • If the sauce is too thick, add an extra tablespoon or two of milk. Remember, the sauce thickens as it cools, so keep it warm for the best consistency.
  • To assemble, place about ¼ of the fries on a plate and top with around ¼ cup of cheese sauce. Drizzle with a tablespoon of ranch dressing and sprinkle with reserved seasonings if desired.
  • Repeat for the remaining fries, ensuring everyone gets a taste of these delicious loaded fries.
  • Serve immediately with extra cheese sauce, ketchup, and ranch for dipping if desired. Enjoy!

Notes

You can use Cajun seasoning instead of making your own. Use freshly shredded cheese for proper melting. Opt for mild or medium cheddar for better melting consistency. This recipe is not suitable for freezing. Hand-cut or homestyle fries work best. Avoid using more than ¼ cup of cheese over the fries to prevent sogginess. For crispier fries, use 2 baking sheets to avoid overcrowding.
