Ingredients
  

Main Ingredients

  • 1.5 cups fine graham cracker crumbs
  • 2 tbsp pure maple syrup or sugar of choice or a pinch of uncut stevia
  • 2 tbsp water if using stevia
  • 1.25 cups raspberries or berries of choice
  • 0.5 cups mini chocolate chips
  • 0.67 cups full-fat shredded coconut sweetened or unsweetened
  • 1.25 cups full-fat canned coconut milk
  • 3 tbsp oil or buttery spread optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and line an 8-inch square pan with parchment paper, leaving some to hang over the sides.
  • In a bowl, mix the graham cracker crumbs with the sweetener and optional oil (and water if using stevia and no oil). Spread this mixture evenly on the bottom of the pan and press it down firmly.
  • Mash the berries and spread them over the crust. Sprinkle half of the chocolate chips, then the coconut, and the remaining chips on top.
  • Pour the coconut milk evenly over the layers. Place the pan in the oven and bake for 33 minutes.
  • Once baked, remove from the oven and let it sit for 15 minutes to set. Slice into bars, cleaning the knife after each cut. You can cut them into 12 larger bars or 20 smaller bars, depending on your preference.

Notes

For a firmer crust, add the optional 3 tbsp of oil or buttery spread to the graham cracker crumbs before pressing down.
