Ingredients

Main Ingredients

  • 3 medium Sweet Potatoes
  • 1 cup Unsalted Butter melted
  • 1.5 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 0.33 cup Maple Syrup
  • 0.33 cup Walnuts chopped
  • 1 teaspoon Thyme

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and slice the sweet potatoes into 1/2-inch rounds, leaving the skin on or peeling as desired. Tip: The skin adds extra nutrients, so consider keeping it on!
  • In a bowl, mix the melted butter, 1 tsp of cinnamon, salt, and pepper.
  • Place the sweet potato slices on a baking tray in a single layer, ensuring there is space between each slice for even cooking.
  • Bake the sweet potatoes for 25-30 minutes until tender. Tip: Check doneness by piercing with a fork; they should be soft but not falling apart.
  • In another bowl, combine maple syrup, chopped walnuts, the remaining cinnamon, and thyme.
  • Once the sweet potatoes are tender, top each slice with a spoonful of the maple syrup mixture.
  • Return the tray to the oven and bake for an additional 8-10 minutes until the sweet potatoes caramelize. Tip: Watch closely to prevent burning; you want a beautiful golden color!
  • Serve the maple glazed sweet potatoes with walnuts as is or add a sprinkle of feta cheese for a savory twist.

Notes

For a savory twist, try adding a pinch of chili powder to the maple syrup mixture before baking.
