  • 1.4 lb Chicken breast, skinless and boneless, chopped
  • 1 tbsp Olive oil or oil from sun-dried tomatoes jar
  • 3 cloves Garlic, peeled and crushed
  • 6 oz Sun-dried tomatoes (in oil), drained
  • 1 tsp Oregano
  • 2 tsp Paprika
  • 9 oz Orzo
  • 2.75 cups Hot chicken stock
  • 0.75 cups Double cream
  • 2 oz Parmesan, grated
  • 4 oz Spinach
  • 1 pinch Freshly ground black pepper

Instructions
 

  • In a large, deep frying pan, heat the oil over medium heat. Add the chicken pieces and cook for about 5 minutes, stirring occasionally until all sides are starting to brown. Tip: Make sure not to overcrowd the pan; cook in batches if necessary for even cooking.
  • Reduce the heat and add the garlic, sun-dried tomatoes, oregano, and paprika. Stir for 3-5 minutes until the garlic is softened and fragrant.
  • Add the orzo, chicken stock, and some black pepper. Stir well, cover with a lid, and cook for 10 minutes, stirring occasionally until the orzo is almost cooked through. Tip: Keep an eye on the liquid level; if it looks too dry, add a bit more stock or water.
  • Reduce the heat to low, add the spinach and cream, and stir for 1-3 minutes until the spinach wilts and the cream is heated through. Ensure the chicken is fully cooked. Tip: Taste and adjust seasoning as needed!
  • Turn off the heat and stir in the grated parmesan. Tip: For added flavor, sprinkle some extra parmesan on top before serving.
