Ingredients
  

  • 2 cups leftover and chilled Mashed Potatoes
  • Bacon slices one per Bomb
  • 1 Egg
  • 1/2 cup Dry Bread Crumbs
  • Cheddar Cheese cut into 1″ chunks (one chunk per Bomb)
  • Salt and Pepper to taste
  • Skewers or toothpicks
  • Oil for frying Canola oil
  • Sour Cream and toppings for dipping

Instructions
 

  • In a large bowl, mix the Mashed Potatoes, Egg, Salt, and Pepper until well combined.
  • Take a small scoop of the Mashed Potatoes and gently wrap it around a Cheddar Chunk.
  • Place the Bread Crumbs in a shallow bowl and roll the potato bomb evenly in the Bread Crumbs.
  • Wrap the bomb with a slice of Bacon and secure it with a toothpick or skewer.
  • Heat about 2" of oil to 350°F in a pan.
  • Fry the potato bombs until they are golden on all sides.
  • Let them drain on paper towels.
  • Allow them to cool slightly, but serve them warm for the best taste.
