  • 1 pound ground beef
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon sea salt
  • 1 large egg
  • 0.33 cup Panko breadcrumbs
  • 1 tablespoon dried basil
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • 1 large garlic clove, minced
  • 0.67 cup barbecue sauce
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon tamari
  • 3 tablespoons water
  • 4 medium sweet potatoes, peeled and diced
  • 1 bunch broccoli, cut into florets
  • 4 tablespoons extra-virgin olive oil
  • 1 ripe avocado
  • 0.5 cup Greek yogurt
  • 1 large lime juice
  • 0.5 teaspoon sea salt
  • 4 cups cooked quinoa or brown rice

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine the ground beef, Dijon mustard, Worcestershire sauce, sea salt, black pepper, egg, Panko breadcrumbs, smoked paprika, oregano, basil, and minced garlic. Mix everything together by hand until well combined.
  • Roll the mixture into 16 meatballs and place them on a plate.
  • In a large oven-safe skillet, heat 2 teaspoons of olive oil over medium heat until it shimmers. Add the meatballs and brown them for a couple of minutes, turning to brown all sides.
  • Transfer the skillet to the preheated oven and bake the meatballs for 15 minutes.
  • While the meatballs are baking, prepare the roasted sweet potatoes and broccoli. On a large rimmed baking sheet, place the diced sweet potatoes. Drizzle with 2 tablespoons of olive oil and sprinkle with salt and pepper. Toss to coat and arrange in an even layer.
  • On another baking sheet, place the broccoli florets. Drizzle with the remaining 2 tablespoons of olive oil and season with salt and pepper. Toss to coat.
  • Roast the sweet potatoes for 25-30 minutes and the broccoli for 20 minutes, or until both are tender and lightly browned.
  • In a bowl, whisk together the barbecue sauce, balsamic vinegar, tamari, and water. Once the meatballs are done baking, pour the sauce over them in the skillet and cook on the stovetop for a few minutes until the sauce is hot and slightly thickened.
  • To make the avocado goddess sauce, combine the avocado, Greek yogurt, lime juice, minced garlic, sea salt, and fresh herbs in a food processor. Process until smooth.
  • To serve, divide the cooked quinoa or brown rice, roasted sweet potatoes, broccoli, meatballs, and avocado sauce between bowls. Enjoy your delicious meal!

Notes

Feel free to mix and match your favorite vegetables for roasting. You can add a pinch of red pepper flakes to the meatball mixture for a little heat. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
