  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 0.5 cup diced yellow onion
  • 1 teaspoon minced garlic
  • 25 ounces marinara sauce
  • 15 ounces fire-roasted diced tomatoes
  • 1 cup water
  • 1 teaspoon Italian seasoning
  • Freshly ground black pepper, to taste
  • 20 ounces refrigerated cheese tortellini
  • 0.33 cup heavy cream
  • 0.67 cup finely shredded Parmesan cheese

Instructions
 

  • Heat olive oil in a large, deep sauté pan or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula as it cooks. Drain excess grease and return the pan to the heat.
  • Add the diced onion and minced garlic, cooking for 2-3 minutes until softened. This step will enhance the flavor of the beef and create a nice aromatic base for your sauce.
  • Stir in the marinara sauce, fire-roasted diced tomatoes, water, Italian seasoning, and black pepper. Mix well to combine all the ingredients.
  • Add the uncooked tortellini to the sauce. Bring the mixture to a boil, then reduce heat to medium-low, cover, and simmer for 10-12 minutes until the tortellini is tender. Stir occasionally to prevent sticking.
  • Pour in the heavy cream, cover, and simmer for a few more minutes until heated through. This will give the dish a creamy texture and rich flavor.
  • Sprinkle 1/3 cup Parmesan cheese over the dish before serving and provide the remaining Parmesan on the side for those who love an extra cheesy kick!

Notes

For a vegetarian option, substitute the beef with plant-based crumbles or extra veggies like mushrooms and bell peppers.
