Mediterranean Chicken with Lemons and Olives

Main Ingredients

  • 1 tablespoon garlic paste or minced garlic
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon Italian seasoning
  • to taste Salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 small lemon, thinly sliced
  • 1 cup chicken broth
  • 1 cup marinated olives

Instructions
 

  • In a large bowl, combine the garlic paste, oregano, Italian seasoning, salt, and pepper. Mix well until fully incorporated.
  • Add the chicken thighs to the bowl and rub the seasoning mixture into the chicken until evenly coated. Set aside.
  • Heat the olive oil in a large nonstick skillet over medium heat.
  • Once the oil is hot, add the seasoned chicken thighs to the skillet. Cook for 5 to 6 minutes, or until the chicken begins to brown. Flip the chicken and cook for an additional 5 minutes, or until browned on both sides. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the diced onions and minced garlic. Season with salt and cook for about 3 minutes, stirring frequently, until the onions are soft.
  • Lower the heat to medium and add the lemon slices, stirring to loosen any browned bits from the bottom of the pan. Cook for 3 minutes.
  • Pour in the chicken broth, return the chicken thighs to the skillet, and bring the mixture to a boil. Then, reduce the heat to a simmer and cook for 5 minutes.
  • Add the marinated olives and continue to simmer for an additional 10 minutes.
  • Remove the skillet from heat and let it stand for 5 to 7 minutes, allowing most of the liquid to be absorbed, but not all.
  • Serve the chicken thighs with olives and the flavorful liquid ladled over the top.

Notes

For a twist, try adding some fresh herbs like parsley or basil before serving. Serve with a side of rice or crusty bread to soak up the delicious sauce.
