Ingredients
  

  • 2 boneless skinless chicken breasts, sliced horizontally into 4 cutlets
  • 3 tbsp olive oil
  • 1 tsp salt divided
  • 1 tsp black pepper divided
  • 1 tsp instant chicken stock optional
  • 2 tbsp garlic powder
  • 1 tbsp chopped fresh oregano or 1 tsp dried oregano
  • 1 zucchini thinly sliced
  • 2 tomatoes chopped
  • 1/2 onion chopped
  • 1/2 cup shredded mozzarella
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp fresh parsley for garnish

Instructions
 

  • Preheat your oven to 400ºF (200ºC). Season the chicken breast cutlets with olive oil, garlic powder, oregano, instant chicken stock, 1/2 tsp salt, and 1/2 tsp black pepper on a shallow plate.
  • Place the seasoned chicken in a baking dish. Top with onions, sliced zucchini, and tomatoes. Drizzle with olive oil and sprinkle with remaining salt and pepper.
  • Sprinkle shredded Parmesan and mozzarella cheese over the chicken and vegetables.
  • Bake the dish uncovered for about 20 minutes until the chicken is cooked through. For a golden finish, broil for the last 2-3 minutes.
  • Let the chicken casserole rest for 5-10 minutes before serving. Enjoy the Mediterranean chicken zucchini bake over cauliflower rice, rice, or couscous. Garnish with fresh parsley.
