Ingredients
  

  • 1 tablespoon olive oil
  • 1 red bell pepper deseeded and diced
  • 1/2 lb lean ground beef
  • 4 garlic cloves minced
  • 3/4 teaspoon salt divided
  • 1/4 teaspoon pepper
  • 1 medium red onion sliced
  • 2 medium zucchini sliced
  • 1 28 ounce can diced tomatoes, undrained
  • 1 teaspoon red wine vinegar
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • Hot cooked spaghetti optional

Instructions
 

  • In a nonstick skillet, cook the ground beef, minced garlic, 1/4 teaspoon salt, and pepper in 1 teaspoon of oil over medium heat until the meat is no longer pink. Drain the excess fat. Remove the beef from the skillet and keep it warm.
  • In the same skillet, sauté the sliced onion in the remaining oil for 2 minutes. Add the sliced zucchini and red pepper; cook and stir for 4-6 minutes or until the vegetables are crisp-tender.
  • Stir in the diced tomatoes, red wine vinegar, basil, thyme, and the remaining salt. Add the cooked beef mixture back into the skillet; heat through.
  • Serve the beef and vegetable mixture over hot cooked spaghetti if desired.
