Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large bowl, combine the finely chopped spinach, crumbled feta cheese, almond flour, egg, olive oil, garlic powder, salt, and black pepper. Mix well until all ingredients are combined. If the mixture feels too wet, add a bit more almond flour.
Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, flattening them slightly with the back of the spoon. This ensures even cooking and crispy edges.
Bake in the preheated oven for 18 minutes, or until golden and crispy. Keep an eye on them to prevent over-browning.
Allow the bites to cool for 5 minutes before serving. This will help them firm up and make them easier to handle.

Store leftovers in an airtight container for up to 3 days. For an extra kick, sprinkle a pinch of red pepper flakes. To make it dairy-free, swap feta with vegan cheese.
