  • 4 pieces boneless, skinless chicken breasts
  • 1.5 cups freshly grated Parmesan cheese divided
  • 0.5 teaspoon freshly ground black pepper
  • 1 cup Caesar salad dressing
  • 0.5 cup sour cream room temperature (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C) and spray the inside of an 8x11 1/2-inch baking pan with nonstick spray.
  • If the chicken breasts are uneven in thickness, place them in a Ziplock bag on a flat surface and pound them to an even 3/4-1-inch thickness using a meat pounder.
  • Sprinkle both sides of the chicken breasts with 1 cup of grated Parmesan cheese and the freshly ground black pepper. Then, place them in the prepared baking dish.
  • In a small bowl, whisk together the Caesar dressing and sour cream. Pour this mixture over each chicken breast, then sprinkle the remaining 1/2 cup of grated Parmesan cheese on top.
  • Bake the chicken in the preheated oven at 375°F (190°C) for 30 minutes, or until a meat thermometer inserted in the thickest part of one of the middle breasts reads 150°F (65°C).
  • Switch the oven to broil and broil the chicken breasts for an additional 2-4 minutes, or until they turn golden brown.
  • Remove the chicken from the oven, cover it loosely with foil, and let it rest for 5-10 minutes before serving.
  • Garnish with chopped parsley if desired.

Notes

For a crispy topping, consider adding a sprinkle of breadcrumbs mixed with Parmesan cheese before baking.
