  • 1 Tbsp avocado oil
  • 1 large yellow onion, diced
  • 1 lb ground beef
  • 4 cups cauliflower, chopped into florets
  • 1 medium bell pepper, chopped
  • 5 cloves garlic, minced
  • 2 Tbsp chili powder
  • 0.75 tsp sea salt
  • 4 cups baby spinach optional
  • 0.5 cup broth, water, or tomato sauce

Instructions
 

  • Heat the avocado oil in a large skillet over medium-high heat.
  • Add the diced yellow onion and cook for about 5 minutes until it starts to soften.
  • Create space in the center of the pan for the ground beef. Place the ground beef in the skillet and brown for 2-3 minutes per side before breaking it into smaller chunks with a spatula.
  • Mix in the chopped cauliflower, bell pepper, garlic, chili powder, and sea salt until well combined.
  • Pour in the broth, water, or tomato sauce and add the baby spinach. Cover the skillet and reduce heat to medium. Cook for about 5 minutes until the spinach wilts.
  • Stir well and continue cooking until most of the liquid evaporates and the cauliflower reaches your desired tenderness, about 5 to 8 minutes.
  • Taste and adjust seasoning with more sea salt, black pepper, chili powder, or lime juice to your liking.
  • Serve in bowls with optional side dishes like rice, beans, avocado slices, or cheese. For tacos, use corn, low-carb, or grain-free tortillas.
