If using fresh tomatoes, wash and roughly chop them along with the onion.
Place the chopped tomatoes and onion in a food processor and blend until smooth. This will be the base of your soup!
In a large pot, heat some olive oil over medium heat. Add the shell pasta and cook until it turns golden, approximately 3-5 minutes. Be careful not to burn it!
Once the pasta is golden, add the blended tomato and onion mixture. Stir well and let it simmer for a couple of minutes to enhance the flavors.
After the tomato sauce has simmered for 5-7 minutes, pour in the vegetable broth. Mix well and bring the liquid to a simmer.
Cook until the pasta is al dente, about 10 minutes, ensuring not to overcook it as it will continue to cook off the heat.
Serve hot and garnish with fresh coriander or cilantro for a burst of freshness!

For added flavor, you can sprinkle some grated Parmesan cheese on top before serving.
