  • 14 oz chopped tomatoes
  • 9 oz shell pasta
  • 0.5 unit onion roughly chopped
  • 4.5 cups vegetable stock
  • unit salt
  • unit pepper
  • 1 bunch fresh coriander or cilantro for garnish

Instructions
 

  • If using fresh tomatoes, wash and roughly chop them along with the onion.
  • Place the chopped tomatoes and onion in a food processor and blend until smooth. This will be the base of your soup!
  • In a large pot, heat some olive oil over medium heat. Add the shell pasta and cook until it turns golden, approximately 3-5 minutes. Be careful not to burn it!
  • Once the pasta is golden, add the blended tomato and onion mixture. Stir well and let it simmer for a couple of minutes to enhance the flavors.
  • After the tomato sauce has simmered for 5-7 minutes, pour in the vegetable broth. Mix well and bring the liquid to a simmer.
  • Cook until the pasta is al dente, about 10 minutes, ensuring not to overcook it as it will continue to cook off the heat.
  • Serve hot and garnish with fresh coriander or cilantro for a burst of freshness!

Notes

For added flavor, you can sprinkle some grated Parmesan cheese on top before serving.
