  • 2 pounds ground beef
  • 1 cup mild chunky salsa
  • 1 cup panko breadcrumbs
  • 2 whole eggs
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 4 tablespoons low-sodium taco seasoning mix
  • 1 cup shredded cheese (cheddar, Monterey jack, or Colby jack)

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper for easy cleanup.
  • In a large mixing bowl, combine the ground beef, salsa, panko breadcrumbs, eggs, salt, garlic powder, and taco seasoning. Mix until well combined. Use your hands for best results!
  • Transfer the mixture to the prepared baking sheet and shape it into a loaf, about 6 inches by 9 inches and 1½ inches thick.
  • Bake in the preheated oven for 50-55 minutes. Check that the center reaches 165°F (74°C) with a meat thermometer.
  • After baking, sprinkle the shredded cheese on top and return to the oven for an additional 3-5 minutes until melted and bubbly.
  • Allow the meatloaf to cool slightly before slicing. Serve and enjoy!

Notes

Feel free to customize your meatloaf by adding your favorite toppings like diced jalapeños or olives. Serve with a side of fresh salad or tortilla chips for a complete meal.
