Main Ingredients

  • 1 cup plain full-fat Greek yogurt
  • 1 cup mini chocolate chips
  • 1.5 cups all-purpose flour
  • 0.25 cup unsalted butter, melted
  • 2 large eggs
  • 0.5 cup maple syrup
  • 2 teaspoons vanilla extract
  • 0.25 teaspoon salt
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda

Instructions
 

  • Preheat your oven to 350°F (180°C) and grease a mini muffin pan with nonstick spray.
  • In a bowl, whisk together the flour, salt, baking soda, and baking powder.
  • In another bowl, combine the Greek yogurt, maple syrup, vanilla extract, and melted butter. Mix in the eggs until smooth.
  • Add the dry ingredients to the wet ingredients and gently stir until just combined using a rubber spatula.
  • Gently fold in the mini chocolate chips into the batter.
  • Evenly distribute the batter into the prepared mini muffin pan. Sprinkle extra mini chocolate chips on top if desired.
  • Bake the mini muffins for 12-14 minutes until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for 2-3 minutes before transferring them to a wire rack to cool completely.

Notes

For added flavor, you can sprinkle some cinnamon or nutmeg into the batter before baking.
