  • Cooking spray or butter
  • 2 cups cooked mashed potatoes
  • 3 large eggs beaten
  • 1 cup grated cheese Parmesan or Gruyère, divided
  • 1/4 cup minced fresh chives
  • 1/4 cup diced cooked bacon or ham optional
  • Kosher salt
  • Freshly ground black pepper
  • Sour cream for serving (optional)

Instructions
 

  • Preheat the oven to 400°F (200°C) and lightly grease the cups of a mini-muffin tin with cooking spray or butter for easy removal.
  • In a large bowl, mix together the mashed potatoes, beaten eggs, 3/4 cup of the grated cheese, minced chives, and diced beef. Season with salt and pepper to taste. Make sure the mixture is well combined for even flavor.
  • Spoon the mashed potato mixture into each muffin cup, filling them about three-quarters full. Sprinkle the remaining 1/4 cup of cheese on top for that irresistible cheesy crust.
  • Bake for about 20 minutes, or until the potato cups are set, golden brown, and heated through. Keep an eye on them for the last few minutes to achieve your desired level of browning.
  • Allow the potato cups to cool in the pan for 5 minutes before gently removing them with a spoon or knife to avoid breaking. Serve warm with a dollop of sour cream if desired.

Notes

For a vegetarian option, omit the beef and add in some sautéed vegetables like bell peppers or spinach.
