  • 2 filets salmon about 1-1.5 lbs
  • 1 tbsp white miso paste
  • 2 tbsp butter room temperature
  • 1 pinch black pepper to taste

Sizzled Scallion Salsa Verde

  • 2 large scallions finely chopped
  • 1 large shallot sliced
  • 4 cloves garlic minced
  • 0.5 tsp Aleppo or crushed pepper
  • 0.25 cup olive oil
  • 2 tbsp cilantro roughly chopped
  • 1 tbsp red wine vinegar
  • 0.5 large lemon juiced

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, mash together the miso paste and butter using a fork until well combined. This mixture will create a rich flavor for the salmon.
  • Place the salmon filets on a baking sheet, skin side down. Spread the miso butter mixture evenly over the top of the salmon. Don't forget to season with a sprinkle of black pepper for added flavor.
  • Bake the salmon in the preheated oven for 15 minutes, or until it flakes easily with a fork. For best results, avoid overcooking the salmon to keep it moist and tender.
  • While the salmon is baking, prepare the scallion salsa verde. In a medium bowl, combine the chopped scallions, sliced shallots, minced garlic, and crushed pepper.
  • In a small pan, heat the olive oil over medium heat until hot but not smoking. Carefully pour the hot oil over the ingredients in the bowl. This sizzles the ingredients and enhances their flavors. Mix well and let it sit for about 10 minutes to allow the flavors to meld.
  • After 10 minutes, stir in the chopped cilantro, red wine vinegar, and lemon juice. This will add brightness to the salsa verde.
  • Once the salmon is done baking, serve it over rice or greens, and generously spoon the scallion salsa verde over the top. For an extra touch, consider adding a sprinkle of sesame seeds before serving.
