  • 1.5 pounds ground turkey
  • 1 cup breadcrumbs (or almond flour)
  • 1 cup shredded onion
  • 3 cloves garlic, minced
  • 0.75 cup shredded carrots (about 1 large carrot)
  • 0.5 cup chopped fresh spinach
  • 0.33 cup shredded mozzarella cheese
  • 0.25 cup ketchup
  • 1 tablespoon chopped parsley
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce
  • 1.25 teaspoon salt
  • 0.5 teaspoon pepper

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine all the meatloaf ingredients except for the glaze. Mix well using a fork or your hands until fully combined.
  • Line a sheet pan with parchment paper and transfer the meat mixture onto the pan. Shape it into a loaf, ensuring it's level for even cooking.
  • Bake for 30 minutes, then remove from the oven and brush the glaze all over the meatloaf.
  • Return the meatloaf to the oven and bake for another 30 minutes or until the internal temperature reaches 165°F (74°C).
  • Once cooked, let the meatloaf cool for 10 minutes before serving. Garnish with chopped parsley.

Notes

You can customize the glaze by adding a touch of brown sugar for a slightly sweet flavor. Ensure the meatloaf reaches the correct internal temperature for safe consumption.
