  • 1.5 cups all-purpose flour
  • 1.5 cups old fashioned oats
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cups unsalted butter, at room temperature
  • 0.5 cups no-stir creamy peanut butter
  • 0.75 cups packed light brown sugar
  • 0.5 cups granulated sugar
  • 1 unit egg, at room temperature
  • 1 unit egg yolk, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cups semisweet chocolate chips
  • 1 cups M&M’s chocolate candies

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a 9x13 baking pan with parchment paper and set it aside for easy removal later.
  • In a medium bowl, whisk together the flour, oats, baking soda, and salt. This will ensure even distribution of the dry ingredients.
  • Using a stand mixer or hand mixer, beat the butter, brown sugar, and granulated sugar on medium-high speed until light in color and fluffy, about 3 minutes.
  • Add the peanut butter, egg, egg yolk, and vanilla extract to the mixing bowl. Mix until well combined.
  • Gradually add the flour mixture to the wet ingredients and mix just until combined.
  • Fold in the chocolate chips and M&M's by hand, ensuring they are evenly distributed throughout the dough.
  • Transfer the dough to the prepared baking dish and press it down evenly using a spatula.
  • Bake in the preheated oven for 25 to 30 minutes or until the edges are set and the center is soft.
  • Let the bars cool in the pan for 10 minutes before lifting them out and allowing them to cool completely.

Notes

For a variation, try adding chopped nuts or dried fruit to the dough for extra texture and flavor.
