  • 1 tablespoon olive oil
  • 4 pieces boneless skinless chicken breasts
  • 0.5 cup BBQ sauce sugar-free if making Keto
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 4 pieces cooked bacon, crumbled
  • 0.5 cup diced tomatoes
  • 2 tablespoons sliced green onions

Instructions
 

  • Preheat your oven to 400°F (200°C). While it heats up, place a large oven-safe skillet on medium-high heat and add the olive oil.
  • If your chicken breasts are thick, gently pound them to flatten. Season both sides with salt and pepper for enhanced flavor.
  • Add the chicken breasts to the skillet and cook for 4-5 minutes on each side, or until they are no longer pink in the center. This ensures a juicy chicken.
  • Once cooked, turn off the heat and evenly pour the BBQ sauce over each chicken breast.
  • Sprinkle the shredded cheese on top of the chicken, followed by the crumbled bacon for that crispy texture.
  • Transfer the skillet to the oven and bake for 2-3 minutes, or until the cheese is melted and bubbly. Keep an eye on it to avoid burning.
  • Remove from the oven and top with diced tomatoes and sliced green onions. Serve and enjoy!

Notes

For a little extra flavor, consider adding your favorite spices to the beef before cooking. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
