No-Bake Marshmallow Cheesecake

Ingredients
  

Crust

  • 1.5 cups graham cracker crumbs (about 10-12 sheets)
  • 0.5 cup unsalted butter (1 stick), melted
  • 2 tablespoons granulated sugar

Cheesecake

  • 16 ounces cream cheese softened (2 packages)
  • 1 cup confectioners' sugar
  • 1.5 cups marshmallow fluff
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

Toppings

  • 1 recipe marshmallow whipped cream
  • 1 cup mini marshmallows for garnish
  • 0.5 cup crushed graham crackers for garnish

Instructions
 

  • Mix graham cracker crumbs, melted butter, and sugar in a small bowl until well combined. Press into the bottom of a 9-inch pie pan. Set aside.
  • In a large bowl, beat cream cheese and confectioners' sugar until smooth. Add marshmallow fluff and vanilla extract, mix well.
  • In a separate bowl, whip heavy cream until stiff peaks form. Gently fold into cream cheese mixture.
  • Pour mixture over prepared crust and smooth with a spatula. Chill for at least 4 hours until set.
  • Spread marshmallow whipped cream over the cheesecake and garnish with mini marshmallows and crushed graham crackers.

Notes

For a toasted marshmallow effect, use a kitchen torch to lightly brown the marshmallow whipped cream topping.
