No Bake Pineapple Cream Dessert

  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter
  • 8 oz cream cheese softened
  • 0.5 cup powdered sugar sifted
  • 20 oz crushed pineapple drained
  • 8 oz fat-free Cool Whip

Instructions
 

  • Preheat your oven to 300°F if you prefer a baked crust. Alternatively, skip this step for a no-bake method.
  • Melt the unsalted butter in the microwave and let it cool slightly.
  • In a bowl, mix the graham cracker crumbs and melted butter until well combined.
  • Press 2 cups of the crumb mixture firmly into a 9x9 square pan. If baking, bake the crust for 8-10 minutes, then cool on a wire rack.
  • In a separate bowl, beat the softened cream cheese until creamy.
  • Gradually add the sifted powdered sugar, one cup at a time, while mixing on low speed until fully mixed.
  • Increase the mixer speed and beat the mixture well for about a minute.
  • Stir 1 heaping tablespoon of drained pineapple into the cream cheese mixture.
  • Spread the cream cheese and pineapple mixture evenly over the cooled crust.
  • In another bowl, combine the remaining drained pineapple with the fat-free Cool Whip.
  • Spread the pineapple and Cool Whip mixture over the cream cheese layer in the pan.
  • Sprinkle the remaining 1/2 cup of graham cracker crumb mixture on top.
  • Refrigerate the Pineapple Delight for at least 4 hours, preferably overnight, to set.

Notes

No alcoholic drinks allowed, please substitute with a non-alcoholic option.
