  • 2 cup chicken stock
  • 1 can cream of chicken soup with herbs (10.75 oz)
  • 1 can cream of mushroom soup (10.75 oz)
  • 2 cup uncooked long grain white rice
  • 1 packet onion soup mix
  • 4 boneless, skinless chicken breasts
  • 1 teaspoon poultry seasoning
  • Salt and pepper, to taste
  • 4 tablespoons unsalted butter, melted
  • Chopped parsley, for garnish (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray.
  • In a large bowl, mix together the chicken stock, cream of chicken soup, cream of mushroom soup, uncooked rice, and onion soup mix until well combined.
  • Pour the mixture into the prepared baking dish evenly.
  • Place the chicken breasts on top of the mixture in the baking dish.
  • Season the chicken with poultry seasoning, salt, and pepper. Ensure to season both sides for maximum flavor.
  • Drizzle the melted butter over the top of the chicken and rice mixture.
  • Cover the baking dish with foil and bake for approximately 1 hour to 1 hour and 15 minutes, checking for an internal chicken temperature of 165°F (74°C).
  • Allow the casserole to cool for 10 minutes before serving and garnish with chopped parsley if desired.

Notes

For added flavor, consider using seasoned chicken broth or adding your favorite herbs and spices to the dish.
