  • 2 teaspoons vanilla extract

  • 1 teaspoon baking powder
  • 1 cup coconut
  • 2 cups oatmeal
  • 1 teaspoon almond extract optional

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, cream together the butter, sugars, eggs, and vanilla until smooth.
  • In a separate bowl, combine all the dry ingredients: flour, salt, baking soda, and baking powder.
  • Gradually add the dry ingredients to the wet mixture, stirring well to combine.
  • Spoon the cookie dough onto a greased baking sheet.
  • Bake for 8-10 minutes until lightly golden.

Notes
