Instructions
Rinse the rice in a fine mesh sieve to remove surface starches, ensuring fluffy individual grains when cooked.
In a saucepan over medium heat, melt the butter. Add the diced onion and cook until lightly browned around the edges, about 3 to 4 minutes.
Add the rice, chicken broth, milk, paprika, salt, and pepper to the pan, stirring to combine. Bring to a simmer, cover, and reduce the heat to low.
Refer to your rice package for cooking times; typically, white rice cooks in about 18-20 minutes, but this can vary.
Cook until the rice is tender and most of the liquid is absorbed. Avoid lifting the lid repeatedly during cooking to prevent steam loss and dry rice.
Remove the pan from heat. Add the shredded cheese. Gently stir and fluff the rice with a fork. Serve warm.
