  • 0.5 small onion, finely diced
  • 8 ounces chicken broth
  • 8 ounces whole milk
  • 0.5 teaspoon paprika
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 4 ounces sharp cheddar cheese, grated

Instructions
 

  • Rinse the rice in a fine mesh sieve to remove surface starches, ensuring fluffy individual grains when cooked.
  • In a saucepan over medium heat, melt the butter. Add the diced onion and cook until lightly browned around the edges, about 3 to 4 minutes.
  • Add the rice, chicken broth, milk, paprika, salt, and pepper to the pan, stirring to combine. Bring to a simmer, cover, and reduce the heat to low.
  • Refer to your rice package for cooking times; typically, white rice cooks in about 18-20 minutes, but this can vary.
  • Cook until the rice is tender and most of the liquid is absorbed. Avoid lifting the lid repeatedly during cooking to prevent steam loss and dry rice.
  • Remove the pan from heat. Add the shredded cheese. Gently stir and fluff the rice with a fork. Serve warm.
