  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 lb ground turkey
  • 1 lb potato gnocchi
  • 1.5 cups pasta sauce
  • 0.5 cup chicken broth
  • 4 cups spinach, roughly chopped
  • 0.5 tsp red pepper flakes optional
  • Salt and pepper, to taste
  • Optional toppings: basil, Parmesan cheese, red pepper flakes

Instructions
 

  • Heat a large nonstick skillet over medium heat. Add the olive oil and let it heat up.
  • Sauté the diced onions for 2-3 minutes until they soften. Add the minced garlic and stir for an additional 1-2 minutes until fragrant.
  • Add the ground turkey to the skillet, breaking it up with a spoon. Cook for 6-7 minutes until browned. Season with red pepper flakes (if using), salt, and pepper. Drain any excess grease.
  • Stir in the potato gnocchi, pasta sauce, and chicken broth. Mix well to ensure the gnocchi is covered in sauce. Bring the mixture to a low simmer and cook for 3-4 minutes, stirring halfway through to prevent sticking.
  • Reduce the heat to low and add the chopped spinach. Cook for an additional 1-2 minutes until the spinach wilts and the gnocchi is tender.
  • Garnish with optional toppings like basil, Parmesan cheese, and extra red pepper flakes if desired.
  • Serve hot and enjoy your delicious meal!

Notes

For a creamier sauce, consider adding a splash of cream or a dollop of sour cream before serving. Feel free to add other vegetables like bell peppers or mushrooms for extra flavor and nutrition.
