Ingredients
  

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter melted
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 ½ teaspoons minced garlic about 3 cloves
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • Salt and pepper to taste
  • 4 large boneless skinless chicken breasts
  • 16 ounces red potatoes cut into 1-inch pieces (about 3 medium red potatoes, or 3 cups cubed)
  • 1 tablespoon olive oil
  • 12 ounces frozen green beans or 16 ounces fresh or frozen broccoli florets
  • 2 tablespoons chopped fresh parsley leaves optional

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit. Lightly grease a rimmed baking sheet with nonstick cooking spray or line it with foil for easy cleanup.
  • In a small bowl, whisk together the olive oil, melted butter, honey, brown sugar, Dijon mustard, minced garlic, oregano, basil, salt, and pepper to make the glaze. Set aside.
  • Spread the potatoes in a single layer on one side of the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper.
  • Place the chicken breasts in a single layer on the other side of the baking sheet. Season the chicken with salt and pepper, then spoon half of the glaze mixture over the chicken breasts. Be careful not to contaminate the remaining glaze with raw chicken.
  • Roast in the preheated oven for 20 minutes. After 20 minutes, stir in the green beans and the remaining glaze with the potatoes. Mix everything together.
  • Move the oven rack to the top shelf and broil the sheet pan for about 5-10 minutes, or until everything is caramelized and slightly charred, the potatoes are fork-tender, and the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  • Serve the dish garnished with chopped parsley, if desired.
