Ingredients

  • 2 tablespoons olive oil
  • 1.5 pounds chicken breast cut into bite-sized cubes
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 0.5 teaspoon oregano
  • 0.5 teaspoon salt and pepper
  • 1 can mild green chiles 4-ounce can
  • 0.25 cup heavy cream plus more for thinning if needed
  • 2 ounces cream cheese softened
  • 1.5 cups shredded pepper jack cheese
  • 0.5 cup white American cheese

Instructions
 

  • Combine all the spices in a small bowl and set aside.
  • Heat olive oil in a large skillet over medium heat.
  • Add the cubed chicken to the skillet and sprinkle with the mixed spices. Toss to coat the chicken evenly. Cook until browned, about 3-4 minutes on each side until fully cooked. Remove the chicken from the skillet and set it aside.
  • Reduce the heat to low. Add the green chiles, cream cheese, heavy cream, and shredded cheese gradually (about 1/2 cup at a time) into the skillet. Stir continuously as the cheese melts until all the cheese is incorporated. Adjust the consistency by adding more heavy cream or milk if needed.
  • Return the cooked chicken to the skillet and mix it with the queso. Serve hot immediately.

Notes

You can customize the spice level by adjusting the amount of chili powder or adding jalapeños for an extra kick.
