  • 1 tablespoon extra virgin olive oil
  • 8 ounces beef sausage casings removed and broken into pieces
  • 1 small sweet onion finely diced
  • 3 cloves garlic minced
  • Salt to taste
  • Pepper to taste
  • 1.25 cups long grain rice
  • 2.25 cups low-sodium chicken broth
  • 6 ounces broccoli cut into 1 1/2-inch florets

Instructions
 

  • In a large nonstick skillet, warm the olive oil over medium-high heat. Add the beef sausage and cook until it develops a golden crust, breaking it into small pieces until no pink remains. Tip: Make sure to keep stirring to ensure even cooking.
  • Add the diced onion to the skillet and sauté for about 3 minutes, or until soft and translucent. Stir in the minced garlic and cook for an additional 30 seconds until fragrant. Season with a dash of salt and pepper to taste.
  • Stir in the rice, ensuring it is well coated with the sausage and onion mixture.
  • Add the chicken broth and bring the mixture to a boil.
  • Once boiling, cover the skillet and reduce the heat to low. Cook for 15 minutes, or until the rice is tender. Tip: Avoid lifting the lid during cooking to keep the steam in.
  • Stir in the broccoli, cover again, and cook for another 10 minutes until the broccoli is tender and the rice has absorbed the broth.
  • Taste the dish and add more salt if necessary. Serve immediately and enjoy!

Notes

For added flavor, consider adding a sprinkle of Parmesan cheese before serving. You can substitute the broccoli with other vegetables like spinach or peas for variety.
