  • 1 tbsp olive oil
  • 1 unit onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp coarsely ground black pepper
  • 1 tsp smoked paprika
  • 2.5 cups beef broth
  • 1.5 lbs lean ground beef
  • 4 tbsp ketchup
  • 2 tbsp yellow mustard
  • 1.5 cups orzo
  • 2 tbsp chopped parsley
  • 1.5 cups shredded cheddar

Instructions
 

  • Prepare your ingredients: Mince the garlic, dice the onion, and chop the parsley.
  • In a large nonstick skillet over medium heat, add olive oil. Sauté garlic and onion for 2 minutes until softened.
  • Add tomato paste and cook for 1 minute, stirring to combine. Then, sprinkle in black pepper and smoked paprika for an added flavor boost. Deglaze the skillet with ½ cup of beef broth, scraping up any bits stuck to the bottom.
  • Next, add the ground beef, breaking it into pieces. Cook for about 3 minutes until browned and no longer pink. Stir in ketchup and mustard, mixing thoroughly.
  • Add the orzo to the skillet, then pour in the remaining beef broth. Stir well and bring to a boil, allowing the flavors to meld together.
  • Once boiling, reduce the heat to low and simmer for 10-15 minutes until the orzo is al dente and the broth has evaporated. Stir occasionally to prevent sticking, adding more broth if needed to achieve your desired consistency.
  • Finally, stir in the chopped parsley and shredded cheddar cheese until melted and well combined. Taste and adjust the salt if necessary.
  • Serve hot, topped with pickles and chopped onion for that classic cheeseburger experience. Enjoy your delicious meal!
