One Pot Cheesy Cajun Beef Rice

  • 1 teaspoon Cajun seasoning
  • 1 teaspoon paprika
  • 3 tablespoons reduced-fat mayo
  • 3 tablespoons fat-free Greek yogurt
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 1 tablespoon low-calorie cooking spray
  • 1 medium onion, finely diced
  • 1 small carrot, finely chopped
  • 3 cloves garlic, crushed
  • 1 pound extra lean beef mince
  • 1.5 tablespoons Cajun seasoning
  • 1 tablespoon paprika
  • 1 tablespoon tomato paste
  • 1 medium red bell pepper, finely chopped
  • 1 cup long grain white rice, dry
  • 2 cups chicken stock
  • 4.23 ounces Colby cheese, grated
  • 1 pinch Salt and pepper to season

Instructions
 

  • In a small bowl, combine the Cajun seasoning, paprika, garlic powder, onion powder, reduced-fat mayo, and fat-free Greek yogurt. Add a splash of water to thin it out. Set aside.
  • Spray a large, flat-bottomed pan with low-calorie cooking spray and heat over medium heat. Add the diced onion, chopped carrot, and crushed garlic. Sauté for 5-6 minutes until softened and fragrant. Tip: Stir occasionally to prevent sticking.
  • Add the extra lean beef mince to the pan. Cook, breaking it up with a spoon, until browned and fully cooked through.
  • Stir in the Cajun seasoning, paprika, and tomato paste. Cook for 1-2 minutes to let the flavors meld.
  • Mix in the finely chopped red bell pepper, rice, and chicken stock. Bring to a boil, then reduce the heat to medium and cover. Let it simmer for 12-15 minutes, until the liquid is absorbed. If the rice absorbs too much liquid, add a little extra stock as needed. Tip: Keep an eye on it to avoid burning.
  • Remove the pan from heat but keep the lid on. Let it rest for 10 minutes to allow the trapped steam to finish cooking the rice. After 10 minutes, fluff the rice with a wooden spoon or spatula.
  • Add salt and pepper to taste.
  • Sprinkle the grated Colby cheese evenly over the top. Place the pan under the broiler or grill for 2-3 minutes, or until the cheese is melted and bubbly.
  • Remove from heat, sprinkle with chopped spring onions, and drizzle with the prepared Cajun mayo just before serving. Enjoy!

Notes

For a spicier kick, add more Cajun seasoning to taste. You can substitute the Colby cheese with your favorite cheese blend for a different flavor.
