Ingredients
  

  • 1 pound chicken breasts cubed into 1-inch pieces
  • 1/2 cup diced onion
  • 1 tablespoon olive oil
  • 1 can 15 oz black beans, rinsed and drained
  • 1 can 15 oz corn, drained
  • 1 can 14.5 oz diced tomatoes
  • 1 can 4 oz diced green chiles
  • 1/4 cup chunky salsa
  • 1 cup Basmati rice
  • 2 tablespoons taco seasoning
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups chicken stock or water
  • 1 cup shredded cheddar/jack cheese
  • Optional toppings:
  • Avocado tomato, sour cream, cilantro

Instructions
 

  • In a large pan or pot over medium heat, sauté the cubed chicken and onion in olive oil for 2-3 minutes until the chicken is cooked and onions are lightly browned.
  • Add black beans, corn, tomatoes, green chiles, salsa, rice, taco seasoning, cumin, chili powder, salt, and pepper.
  • Pour in chicken stock or water, bring to a light boil, cover, and reduce heat to low. Cook for 15-20 minutes until the rice is fully cooked.
  • Serve topped with your favorite toppings like avocado, tomato, sour cream, and cilantro.
