One Pot Chicken Parmesan Pasta

  • 2 pieces boneless, skinless chicken breasts, diced
  • 1 tsp Italian seasoning
  • 1 /2 tsp garlic powder
  • 1 medium yellow onion, minced
  • 3 cloves garlic, minced
  • 16 oz dried short-cut pasta (like rigatoni)
  • 24 oz jar marinara sauce
  • 1 cup mozzarella cheese
  • 1 /2 cup parmesan cheese
  • 1 to taste Salt and pepper
  • 1 optional additional dried Italian seasoning
  • 1 to taste Fresh parsley and/or basil, minced for garnish

Instructions
 

  • Heat a drizzle of olive oil over medium-high heat. Cook the diced chicken seasoned with salt, pepper, Italian seasoning, and garlic powder for about 5 minutes until mostly cooked. Transfer to a plate.
  • Sauté minced onion and garlic in the same pot for 2-3 minutes. Add marinara sauce and fill the jar with water; add to pot. Bring to a boil, then reduce to a simmer.
  • Return chicken to the pot with dried pasta. Stir, cover, and cook for 10-15 minutes until pasta is tender.
  • Stir in parmesan cheese and 1/4 cup mozzarella cheese.
  • Top with remaining mozzarella and cook for 2-3 minutes until melted.
  • Garnish with Italian seasoning and fresh herbs if desired.

Notes

For a crispy topping, broil the dish for a few minutes after melting the cheese.
