Main Ingredients
2tablespoonolive oil
14ouncespre-cooked smoked sausage, sliced
1mediumyellow onion, diced
3clovesgarlic, minced
12ouncesfettuccinegluten-free if needed
14.5ouncesfire-roasted tomatoes
2.25cupschicken or vegetable broth
1pounduncooked shrimp, peeled and deveined
0.5cupcoconut cream or cashew cream
1tablespoonchopped parsleyfor serving
Instructions
In a medium bowl, mix all the Cajun seasoning ingredients together and set aside.
Heat olive oil in a deep skillet over medium-high heat. Add the diced onion and sliced smoked sausage. Cook until the onion is soft, about 2-3 minutes. Tip: Stir occasionally to prevent sticking.
Add garlic and half of the Cajun seasoning, cooking for another minute to release the flavors.
Add the fire-roasted tomatoes (with juice), broth, and uncooked pasta. Stir well, cover, and bring to a boil over medium-high heat. Reduce heat to medium-low and let it simmer for 11-12 minutes, stirring occasionally to ensure even cooking.
While the pasta cooks, coat the shrimp with the remaining Cajun seasoning for extra flavor.
When the pasta is almost tender, add the coconut cream and seasoned shrimp. Stir and cook until the shrimp are opaque, about 3-5 minutes. Tip: Be careful not to overcook the shrimp to keep them tender.
Garnish with chopped parsley before serving. Enjoy your delicious meal!
Notes
For a spicier kick, increase the amount of cayenne pepper in the Cajun seasoning.
