One Pot Creamy Cajun Shrimp Pasta

Ingredients
  

Cajun Seasoning

  • 2 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon cumin
  • 0.25 teaspoon black pepper

Main Ingredients

  • 2 tablespoon olive oil
  • 14 ounces pre-cooked smoked sausage, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 12 ounces fettuccine gluten-free if needed
  • 14.5 ounces fire-roasted tomatoes
  • 2.25 cups chicken or vegetable broth
  • 1 pound uncooked shrimp, peeled and deveined
  • 0.5 cup coconut cream or cashew cream
  • 1 tablespoon chopped parsley for serving

Instructions
 

  • In a medium bowl, mix all the Cajun seasoning ingredients together and set aside.
  • Heat olive oil in a deep skillet over medium-high heat. Add the diced onion and sliced smoked sausage. Cook until the onion is soft, about 2-3 minutes. Tip: Stir occasionally to prevent sticking.
  • Add garlic and half of the Cajun seasoning, cooking for another minute to release the flavors.
  • Add the fire-roasted tomatoes (with juice), broth, and uncooked pasta. Stir well, cover, and bring to a boil over medium-high heat. Reduce heat to medium-low and let it simmer for 11-12 minutes, stirring occasionally to ensure even cooking.
  • While the pasta cooks, coat the shrimp with the remaining Cajun seasoning for extra flavor.
  • When the pasta is almost tender, add the coconut cream and seasoned shrimp. Stir and cook until the shrimp are opaque, about 3-5 minutes. Tip: Be careful not to overcook the shrimp to keep them tender.
  • Garnish with chopped parsley before serving. Enjoy your delicious meal!

Notes

For a spicier kick, increase the amount of cayenne pepper in the Cajun seasoning.
