  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 2 cups water
  • 12 oz dried orecchiette or other short-cut pasta
  • 1 tbsp sherry vinegar
  • salt to taste
  • freshly ground black pepper to taste
  • fresh herbs for serving (optional)
  • toasted breadcrumbs for serving (optional)

Instructions
 

  • In a large skillet over medium heat, heat the olive oil. Add the onions along with a pinch of salt. Cook, stirring often, until the onions caramelize, about 25-30 minutes. *Tip: Patience is key here—don’t rush the caramelization, as it deepens the flavor.*
  • Add the garlic, mushrooms, and thyme to the skillet. Sauté for 3-4 minutes until the mushrooms start to soften. Pour in the white wine to deglaze the pan, scraping up any browned bits. Then add the flour, cooking for an additional 2-3 minutes until thickened.
  • Pour in the beef broth and water. Season with salt and pepper. Bring to a boil, then add the pasta. Cook for 8-10 minutes or until the pasta is al dente. *Cooking times may vary for different pasta shapes, so check your package instructions.*
